The Breakfast Club, a 1980s-themed breakfast and lunch restaurant, opened in April in Black Forest. While this is the first restaurant for owner Stacy Troy, she is no stranger to the food industry. Troy worked at the Golden Bee at the Broadmoor in Colorado Springs and as the general manager at The Club at Flying Horse, also in the Springs.ìMy whole life is restaurant experience,î Troy said.Relatively new to Colorado, she and her husband moved to the Springs from Florida in 2013. ìWe went on a vacation here about three years ago, and I fell in love with the area,î Troy said. She is now a resident of Black Forest, which makes for an easy five-minute commute to her new restaurant.The Breakfast Club opened up in the old R&R Coffee CafÈ building, the new owners renovated it to reflect the 80s style. ìThe 80s is when I grew up, and to me it was just a fun time,î Troy said. ìIt was full of color and just happy. I guess we sort of target that demographic; 80s music plays on the stereo, and the dishes all reflect 80s-themed names like ëShould I stay or should I goí and ëBananarama.íîAlthough the R&R Coffee Cafe is just across the street from Troyís restaurant ó and R&R also serves breakfast and lunch ó the service is different.ìWe have table service; they have counter.îTroy said family recipes make up some of the food choices at The Breakfast Club. ìThere are a lot of family recipes, like my mother-in lawís cinnamon rolls and a Boston-baked-bean recipe of my motherís.î She said consistency is important to maintain a restaurant. ìYou want people to come in and order something, and it tastes the way it is supposed to each time,î she said. She also plans to remain a breakfast-and-lunch-only restaurant. ìI have always been a morning person,î Troy said. ìIím tired of working nights.îShe has a five-year lease on the property, but Troy said she plans to be there a lot longer.
