Hurricane Katrina was the last straw for Martin Allred. He moved to Colorado following the big storm, and he brought a taste of Cajun country with him. On July 13, Allred hosted a grand opening celebration of Nawlins Bourbon Street in Falcon. The restaurant had opened as Nawlins Bar B Q three months ago; and, to round out the New Orleans ambiance, the owners added the Bourbon Street bar.Allred and his business partner Jacqueline Hine formed Yankee Cajun LLC and envisioned a restaurant and bar that would provide good seafood and barbeque and a variety of cocktails in Falcon.Nawlins Bourbon Street offers a wine tasting every other week as well as a beer tasting every other week. The full bar has 35 different beers and nine on tap. Other drink specialties include frozen and tropical drinks.Patrons can enjoy New Orleans-type music on the weekends, from jazz to Dixieland to Cajun to Zydeco (Creole). Allred knows his music. His stepfather is Allen Fontenot, a well-known Cajun fiddler. One can listen to Fontenot’s foot-stomping Cajun music via the Internet.Cajun specialty foods are available at the bar as well.Although he is a professional photographer, Allred also knows his food. He cooked at the Cajun Bandstand in New Orleans – the restaurant served 300 people every weekend.Storm Walker called the food at Nawlins “the best Cajun in Colorado.” Walker belongs to the Kansas City Barbecue Society and said he has judged barbecue contests for about 25 years. “I absolutely adore this food,” he said.Walker said he has reviewed more than 100 restaurants – and besides the food, Nawlins’ service and friendliness were over the top.
