The brand new ìfood truckî in town is actually more of a mini-restaurant on wheels. The owners offer breakfast, lunch and dinner ó and more than 30 items on the menu.The Roasted Jalapeno is the brainchild of Peyton residents Stacy and Miguel Navarro.Miguel Navarro has more than 20 years experience with Mexican food fare. His family members have been involved with Mexican restaurants for years, and Navarro cooked for his parentsí restaurant, Las Hadas, in Aurora, Colorado. Stacy Navarro just finished culinary school, and both are excited to bring their skills to Falcon.The Roasted Jalapeno is permanently located at 6985 Meridian Road, near the Farmerís Market and Expresso-X. Stacy Navarro said they plan to be open year-round, and have an outdoor seating area for about 12 to 15 customers.ìWeíre family friendly and affordable, and our customers will leave with a full belly,î Stacy Navarro said. They are offering full dinners, and all ingredients are fresh. Among other dishes, the refried beans and green chili, which is vegetarian, are their own recipes.They can also provide meals for meetings, school and other events. ìWe have the capability to make 100 breakfast burritos; we have plenty of space and refrigeration,î Navarro said.Every afternoon, including weekends, they take a ìsiestaî break between 2 and 4 p.m. The Roasted Jalapeno is open seven days a week: Mondays ó 7 a.m. to 2 p.m.; Tuesdays through Fridays ó 7 a.m. to 7 p.m. (minus the 2-4 siesta); Saturdays ó 8 a.m. to 2 p.m. and 4 to 7 p.m.; and Sundays ó 8 a.m. to 2 p.m. and 4 to 6 p.m. Sunday hours may change with the seasons.Stacy Navarroís 17-year-old daughter, Jasmine, is working in the business. Two other children, Xander, age 8, and Sophia, age 2, are too young to help mom and dad.
