Colorado ranks No. 3 in the nation on the number of microbreweries per state. Beer connoisseurs in Falcon will not have to travel far to wet their whistle come January. JAKs Brewing Co. is opening a brewery at 7654 McLaughlin Road (formerly Staffords) in mid to late January.Antonio ìTonyî Lee, chief executive officer, said originally he and his partners wanted to open a larger tap house; however, they decided to start out by brewing their own beer.Jeff Marjamaa and Ken Trousdale, chief financial officer and chief operations officer, respectively, are the brewmasters, Lee said. ìThey started home brewing first and have over 30 years combined of brewing experience,î he added.ìBeer is awesome,î Marjamaa said. ìIíve always really liked it and enjoy cooking. When I turned 21, one of the presents I got was a home-brewing kit. I like creating flavor profiles.îRyan Jensen is the fourth partner, and Jensen, Trousdale and Lee served in the United States Air Force for a combined 60 years. Lee said their strong ties to the military influenced the theme of the brewery. Air Force photos and historical photos will adorn the walls of JAKs.ìWeíre going for a pub house feel,î Lee said. ìWe all live out here and like the small town, local feel.îìIf you look at the pub culture in England, itís very connected to the community, and thatís what we are,î Marjamaa said.ìThe idea is for this to be a place to come in and socialize,î Trousdale said.Lee said JAKs is different from other restaurants and bars in the area because it is not a bar. ìWe are more of a tasting room,î he said. ìOur beer is all brewed here. They are our brews. Weíll have six to eight different brews available at any given time, four that will be our solid standard brews and then weíll rotate through seasonal brews.î”We’re not a restaurant so we won’t create or provide food,î Trousdale said.†Instead, their plan is to visit other local establishments and find out if they would be willing to deliver to JAKs.”We’d like to have food trucks rotating through as well,î Lee said.Lee said he is excited to get the brewery up and running. ìWeíve put together a team that is great at what they do.î
