Restaurante Mexicano abre de Falcon

Modesto Ramos and Jose Davila believe they can bring something new to the table. The team, with 20 years of restaurant experience, opened Guadalajara Family Mexican Restaurant in the former Poblano’s building on McLaughlin Road in October.The Falcon location is Ramos and Davila’s fourth Mexican restaurant under the Guadalajara name. Their other three Colorado restaurants are located in Castle Rock, Elizabeth and Parker.ìIt’s all family,î Ramos said. ìCousins, brothers-in-laws, we’re a small family-owned business.îRamos said he started looking at Falcon for a new location five years ago. ìWhen Poblano’s closed, a customer who lives here and comes up to eat at our place in Elizabeth told me the building was empty,î he said. Ramos and Davila said it took close to four months from the initial negotiations with Poblanoís owners to Guadalajaraís ìsoft openî in October.Although the genre of food is the same, as well as the location, Gudalajara is ìall different,î Ramos said. ìWe have more menu choices, we have more than 20 different salsas. A lot of different choices, and our 20 years of experience make it so we can tell people to give us a try and you’ll see the difference.îRamos and Davila said they were careful when opening the restaurant to ensure a smooth start for customers. ìWe trained all our servers at our other locations for a couple months before we opened the doors, to make sure we do things the right way,î Ramos said. ìWe did a lot of work on the kitchen, with the dÈcor, to make sure it was how we want it.îOne Falcon resident gives a thumbs up to the new restaurant. ìWe gave them a try one of their first couple of days,î said Brian Swanson. ìIt was really good. And I like what they did with the place inside.îThe owners hope to be part of the Falcon community. ìWe are joining the chamber, and all the time we like to have the schools, teams, things like that come in,î Ramos said. ìAny time they ask to have events at our other places, we really like to do that. It gets families in and helps out.îAlthough Guadalajara is the third Mexican restaurant in Falcon, Davila and Ramos said there is room for all three to be successful. ìI respect all restaurants and owners, and that’s why I like to do things different,î Ramos said. ìI didn’t come here to compete with them, but to bring more choices for people who live here.î
