Besides, peanut butter is good for you!Crust:1 cup graham cracker crumbs2 Tbsp. packed brown sugar1/4 cup melted butterFilling:1/2 cup peanut butter3/4 cup icing sugar1 8 oz (250 g) package cream cheese, at room temperature1 cup heavy (whipping) creamIn a medium bowl, stir together the graham crumbs, brown sugar and butter; mix with a fork until well blended, then press the mixture into the bottom and up the sides of a 9-inch pie plate. Chill until firm while you make the filling.In a large bowl, beat the peanut butter, icing sugar and cream cheese until smooth. Whip the cream until stiff peaks form, and fold it into the peanut butter mixture (or vice versa). Pour into the crust and chill until it firms up and is sliceable. Serves 6-8.
