Creamy Ginger Pumpkin Soup

2 Tbsp. unsalted butter
1/4 cup chopped yellow onion
2 Tbsp. all-purpose flour
4 cups vegetable broth
1 15-ounce can pumpkin
1/2 cup sweetened applesauce
1/2 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground black pepper
1 cup heaving whipping cream
salt and black pepper to taste
fresh thyme (optional)
chopped crystallized ginger (optional)

In a large saucepan, melt butter over medium heat. Add onion; cook and stir 5 minutes or until tender.

Whisk flour into onion mixture; stir over heat for one minute. Stir in broth, pump-kin, applesauce, ginger, allspice and 1/4 teaspoon black pepper. Bring to a gentle boil; reduce heat to low; cover and cook 20 minutes

Stir cream into pumpkin mixture. Cook until heated through. Season with salt and pepper

Serve (add optional ingredients if desired)
