Descar’s Roadside Bar & Grill

Brian Declar started in the restaurant/bar business as a teenager, and has managed three different bars and restaurants back east. He has also owned three other businesses on the East Coast. So, opening Decsarís Roadside Bar & Grill in Black Forest, Colorado, seemed like a good fit.The new grill, which has been open about a month, replaces the previous Boís Roadhouse, and Descar is well-aware that other restaurateurs have tried to ìmake itî in the same location over the years. However, Descar knows the bar/restaurant business is not a retirement gig or a business whim. It takes experience, dedication and hard work to make any food and drink establishment viable and attractive to customers.So, Descar has a plan. He wants to be a neighborhood establishment, offering a friendly atmosphere and bar/pub style food, along with a full dining experience (like steaks, seafood, pasta) and vegetarian fare to meet the needs of a variety of customers.Descar refers to his restaurant as ìthe best-kept secret in Black Forest.î But the word is out as business is growing, he said. He currently employs three chefs: one with experience in Louisiana homestyle cooking; a pit master barbecue chef; and a schooled chef experienced in high-end cooking. There are seven employees total that serve guests in a small bar and a dining room that seats 35. A patio that currently serves 16 will be expanded in the spring and include acoustic music as well.Descarís Roadside Bar & Grill is open for breakfast, lunch and dinner. Breakfast features home-style food. ìFill your stomach with warm, working class meals for breakfast,î he said. He will also offer inexpensive lunch specials, from $4.99 to $5.99; and run draft and food specials every day; such as Taco Tuesday. And Friday nights, Descar will offer Karaoke for wannabe rock stars, as soon as he is licensed for Karaoke. As a business in Black Forest, he plans to help charitable organizations in the community, especially around the holidays. ìI want to give back to the community that gives to me,î Descar said. Descar wonít have much free time for awhile, but he does enjoy getting out on his Harley. ìI do like to ride,î he said. Although he said he is not into biking with a group, he is open to hosting rides during the summer that benefit the community.His wife, Rebecca, is a 27-year veteran who has worked at the U.S. Air Force Academy, Buckley Air Force Base in Denver and Shriever Air Force Base in Colorado Springs.The grill, located at 6750 Shoup Road, is open from 7 a.m. to midnight Monday through Wednesday; Thursday and Friday ó 7 a.m to 2 a.m.; Saturday ó 9 a.m. to 2 a.m.; and Sunday 9 a.m. to midnight.
