Cajun food lovers take heart: Nawlins Bar B Q is expected to open its doors in the Falcon Safeway Center on March 15. Owners Martin Allred and Jacqueline Hine are featuring Cajun dishes like pulled pork, spare ribs, sausage and catfish.The new restaurant, which will open for lunch and dinner, is setting up shop in the old Falcon Grille.Allred said he decided to open Nawlins because he couldn’t find “good red beans and rice, po-boy sandwiches or anything like that out here.” And he knows the business – Allred owned a barbeque restaurant in New Orleans before moving to Colorado in 2007.He said he learned to cook when he was 13 years old. His Cajun offerings are the recipes of Cajun Chef John Folse. The Cajun food will be complimented with bread by La Baguette in Old Colorado City, Allred said.Allred’s partner Jacqueline Hine is a former math professor originally from New York. Hine said she took culinary classes in New York before moving to Colorado. “Nawlins will be very different than other barbeque restaurants,” she said.”She’ll be doing all the hard stuff,” Allred said.Both Allred and Hine said their dishes are different from area restaurants. Allred said, “It’s important to us that we don’t compete with any of the restaurants in Falcon.”
