Viva la enchilada

Get ready to indulge the palate with authentic Mexican food, topped with homemade sauces and washed down with a margarita. Two brothers from Illinois, Don and Ed Klein, plan to bring their knowledge of Mexican cuisine to Falcon.Don Klein said they expect to break ground in August at the site designated for Falcon’s first real Mexican restaurant – 7328 McLaughlin Road, just south of Frankie’s Too.Klein and his family owned a Mexican grocery store in Illinois for 15 years. Klein said his brother, Ed, moved to Colorado Springs about five years ago and recently convinced Don and his family to join him. Don moved his family to the Black Forest, and both brothers saw a void in the Falcon restaurant market, making it an ideal spot for a Mexican restaurant.The 200-seat restaurant will be family orientated, Klein said. “A glass enclosed patio outback will give us additional seating,” he said. “The patio will have outdoor heaters and a great view of Pikes Peak. Inside, there will be two fireplaces, along with a large meeting room that will seat about 60 people for organizations like the Lion’s Club or whatever group needs a meeting room. We have already obtained a liquor license and while there will be a bar, it will not be the major focus of the business.”Both brothers like to cook, but they’ve invited George Gonzales, a chef who ran a restaurant they loved back home in Illinois, to run Poblano’s kitchen. Rayne Burke, also from Illinois, is moving here in August to begin his job as general manager of the business, Klein said.Besides a wide range of Mexican food, the menu will include a selection of American dishes like steaks, burgers and fish for those who aren’t too fond of Mexican food.Poblano’s adds a bit of competition to the current restaurant scene in Falcon. Frank Patton, owner of Frankie’s Too, has been expecting it. “Everyone expected growth to occur in Falcon faster than it is happening,” Patton said. “This last winter has been hard for many businesses, but I wish the new owners the best of luck.”Klein said he expects construction to take six months. He said the families are anticipating opening early in 2008.
